Cherry Cheesecake

For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 4 large eggs
  • 1 can of cherry pie filling


  1. Preheat the oven to 325°F.

  3. Press the mixture into the bottom of a 9-inch springform pan. Use a flat-bottomed glass to press the crust firmly into the bottom of the pan.
  4. Bake the crust for 10 minutes. Remove from the oven and set aside.
  5. In a large mixing bowl, beat the cream cheese until smooth.
  6. Gradually add in the sugar and vanilla extract, and beat until creamy.
  7. Add in the eggs, one at a time, and beat until well combined.
  8. Pour the filling mixture over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the cheesecake is set.
  10. Remove the cheesecake from the oven and let it cool to room temperature.
  11. Once cooled, spread the cherry pie filling over the top of the cheesecake.
  12. Chill the cheesecake in the refrigerator for at least 2 hours before serving.

  • For a thicker cheesecake, use a 10-inch springform pan and increase the baking time by 5-10 minutes.
